Is the control by the return? is dehumidify on? If dehum is on then the unit can over cool by 2 degrees if calling for de-humidification.

Model numbers would be helpful but it sounds like the control board fan speed wire is on either the 4 or 5 ton pin instead of the 3 ton. Just a guess but you may be moving too much air.
