Stupid question...have you verified that your pressure transducer and line temperature sensors are reading correctly? What was the txv position during all this?
Is your superheat fluctuating too?
Do you mean check valves? I've worked on quite a few of bigger dx units like this, it's not too uncommon. What do you mean your pressures are fluctuating? Head and suction? Sh? Sc?
Check your superheat, the last time I saw this happen someone added so much oil it blew the valves out of the compressor. Ended up being the txv was starving really bad and I ended up taking a gallon...

Burnouts aren't a "put the compressor in and walk away" type situation. They require a lot of TLC and frequent return trips to remove driers and replace them.
I'd find one of the Honeywell T775 series controllers and find the one that has the features that you need.
Compressors don't "die" they are all "murdered". Sounds like you need to find the root cause and fix that. If you have a 3 phase piece of equipment without phase monitoring, you're playing with fire....
Drier would be my guess too. What was the indoor temperature with that 89 degree suction?
I was thinking the same. Are you sure one of your condenser fans isn't shutting down on thermal overload?
Restriction + overcharged gets my vote.
Have you thought about getting into building automation/controls since you already are familiar with computers? As for what would be best, someone from down that way would have to answer that for you.
That's a scary thought that it could happen to any of us. Glad you're ok, you can fix/replace a recovery machine....

I'll take a stab at it....txv valves are rated for a range of tonnage so it'll throttle to match the tonnage of compressors that you have running.
