sure you are not bypassing or recirc of the cond air?
My bet would be low on charge and yes that spot on the indoor coil looks like a leak spot. That should be easy to check.
Was it even properly started up and tested? If they say it was, ask for the start up sheet.
At 30 years old, i can only imagine what shape it is in.
Sounds like safety switch for the condensate system, but then again that is a guess from where i sit.
Most of carriers upper end zoning will not be able to just throw a t-stat on. It may be a zoning upgrade needed. Others on here will have more to say.

Pull the power to inducer while running in heat and verify it shuts down, if it does must be a pressure switch in it somewhere. At the least verify shut down on failed inducer!
Are flow controls on the water side installed and set correctly? Can you lower the loop temp down 5-10 deg temporary to see how the pressures look? 4-5 deg drop thru the water coil plus at 85 deg...
What does your installing contractor advise?
You need a good amp meter around the fused line and then start cycling all the components, if nothing shows a high amp draw, start looking at all the control wiring for chafing or bare spots.
As i remember you could pull the inducer motor and look thru to the ends of the secondarys.
At that age and design of furnace ,i would bet the secondary starting to plug up. Does the exhaust have a foul odor from it?
What does your meters tell you?
What maintenance would lead you to replace tank? Most larger ones have bladders that can be replaced, if needed.
Air bleeders piped to drains?
Does it have factory installed economizers?
I will second this, seen this a lot when charge is low.
replacing the unit is still cheaper than rotting out the pool structure.
Is the insulation old and brittle, may need to replace with a higher R rating and then a vapor shield over that.
