sounds like you need a detailed cleaning by some one who knows what they are doing then if the problem is still present after cleaning they could fix it.

not sure if this is the one that turns on with opening the vat valve. but if they are turning the pump on without the valve open the that would not be good on the pump.

I enjoy working on the hot side as well but not enough to only do that. go with what you love so that work is not such a chore.

Schematics are the best way to understand the circuit. It’s like a road map when you’re not sure how to get somewhere.

sounds like pressure switch problem but more info needed.

I believe that depending on the surface mounted the thermostat may be tweaked out of position causing problems.
