That's how it works, it keeps the water level in the machine and just keeps reusing it. To flush the minerals, you have to open that manual drain valve.

Hoshi is the way to go. If you have 208/230v available, I would go with the 900 for a restaurant. Its a good size and it is a full 30" wide.
