Not sure if you have a question or need any advice on this. Replace the thermistor and you are all set? Don't know with your wording of the issue.
Defrost depends on the evap thermistor so you should be ok till monday.
If you have a coil and box sensor you can temp. wire the coil sensor as the box sensor and the defrost will terminate on time with the coil sensor disconnected.
FWIW I don't think you should be reading 86˚ with a disconnected box sensor.
Shorted would read as high as possible and disconnected would read as low as possible on the display.
32k ohms +/_10%in an ice bath is what coil and cabinet sensors should read.

That's a Jenny Craig box. Since we have no DIY here, call Traulsen tech support. Fred Hightower is Jenny Craigs tech support rep. Depending on the DOM of the freezer there may be other issues in the controllers programing that need to be addressed as well as issues with the placement of shelving and product.
