Thigh just got lucky
Well after shucking the skin and bones off of about 5 lbs of chicken thighs the old lady picked up yesterday.
I went to the cupboard for the trusty jamaican jerk marinade and nowhere to be found. After 10 minutes of back and forth i decided to give it my own spin and it turned out pretty good but not so jamaican. The whole time it marinaded it smelled like teriyaki chicken but had a great juicy taste of its own.
Anyone have any good marinades to recommend?
Heres how it went
8 tblsp kikkomon soy sauce
6 tblsp EVOO
3 tblsp white vinegar
1 tblsp sea salt
2 tblsp coarse ground pepper
2 tblsp cayenne pepper (love a bit of heat)(marinaded so not that bad)
1 clove garlic minced
5 small chives minced as well
mixed this all up with water enough to cover and refrigerated for 3 hours then grilled
It came out just the right darkness and juicy as can be.
Would love to here back on other chicken thighs cuz they are highly overlooked

I would like to see someone genetically alter a chicken to have all thigh meat. ;) It really doesn't get any better than thigh meat.
White meat cooks faster than dark meat, so everything dries out sooner than the thigh.
I will grill a couple dozen Thighs on my BGE and take to our church Pot Luck. People go nuts over it!
I'd like to try the "Jerk" style sometime.
