I like to season greens with smoked turkey legs that I get from my local smokehouse (Food Depot). Shaw is good. :)
Bought a bag of washed & torn up collard greens this weekend. I still soaked them and checked, but they really were clean.
I chopped up 6 strips of peppered bacon and browned in a large pan, stirred in a cup of chopped sweet onion, cooked till they glistened, about 4 - 5 minutes. I wanted a little more grease so I drizzled with olive oil, and then stirred in the greens an tossed to coat.
I added about three cups of chicken broth, touch of salt, eight pepper corns, 1/2 tsp of thyme and a shake of cayenne. Covered about 3/4 with lid and cooked on low for 70 minutes.
Mmmmmmmmm. Savory
