Glad to hear that Snorkel is working good now.I've worked on them before and trying to recall if the pilot gas uses a little tapered needle valve as I recall taking apart and aside from cleaning pilot assby. used electronic degreaser spray and a shot of compr.nitro. to get decent pilot.
Problem solved! Once I was able to check the gas pressure(what a pain in the butt to disassemble to just put a gas pressure test fitting on the solenoid valve!) I saw it was only running at 3" and dropped to almost nothing when the burners were on... adjusting the existing regulator yielded no results. They only stayed on long enough for the one mercury switch to cool down and then the right burner would go off.... Put a new regulator on and set it to 6" with the burners on and it works like a champ now!

Those pilot heads needs to be super hot with a red glow to make the pilot safety stay open. In the past I have tried cleaning out the orifice with no luck. Blue burns isn't hot enough. Replace the pilot head if it isn't glowing redish orange.
more info It's electronic ignition. I cleaned the pilot assembly and adjusted the gas for the pilot up as far as it would go, I did see it was a separate source of gas. The way it looked, when both burners came on, the pilot light on the right burner did not move away from the mercury switch bulb when the burner came on, but when the left burner came on the pilot would move away from the bulb a little, making it look like it shut the burner off on safety. When I turned the manual gas knob down just a tad it seemed like it straightened it out some(both burners would stay on....) I know there's another issue going on here, so I guess the next step would be to verify proper gas pressure while it's running.... Also wanted to state that every now and then the right burner would do the same thing, so it's something before the mercury safety valves in my opinion.... I had initially thought the left safety Could be a pain, looks like the old one on the bottom and this one on top of it are built into the wall. and I'm assuming most of the controls are on the right side. Thanks for the advice!

Electronic ignition or standing pilot? Vulcan made both types, I am assuming it is electronic ignition with the mercury burner safety valves. My 1st guess is pilot burner clogged with dust, there is a breather hole in each pilot burner that collects dirt.Next would be a gas pressure issue. A good place to hook into the gas line is at the solenoid valves behind the control panel. There are adjustment screws for the pilot flames, would raising the pilot flame help engulf the capillary better? Those mercury burner safety valves may be getting iffy also, I heat them (the capillaries at the end) up with my mapp torch and let them run for awhile, if you lose your burner gas when they drop back to 'operation temperature' they are probably due for replacement. Remember, the safety valves block burner gas, the pilot runs off a separate solenoid which energizes when the oven is turned on.
Snorkel convection oven burner issue Model SG101OT I'm having an intermittent problem with this thing. Customer called to tell me he put baked potatoes in it and a while later they still were not done. said the burners would not come on. I get there and I turn it on, both pilots lite. Turn the stat up and the right burner lights and the left burner lights, but then the left one goes out, looks like the pilot flame moved away from the "mercury switch" or whatever type safety switch it has. I pulled that side apart, checked and cleaned the pilot orifice and made sure the switch bulb didn't have crap coated on it and turned it back on, and it did nearly the same thing, it would go on, the pilot would move away a little and the burner would go off. I thought maybe the gas valve for that side was bad, but then I backed down the gas that goes into both gas valves just a slightly, then they both came on and off normally and stayed on till the unit came up to temperature. I told the cook to try that and see how it behaves. He called me a week later and said it was ok.... Then he called me last week to tell me it was acting up again. I got there and it seemed to be working ok, but you have to wait about a minute after the pilots lite before you can turn up the thermostat, then both burners come on, but every now and then the right burner will go off.... This leads me to think there is not a problem with either of these safety gas valves, the problem may be with something before it gets there. It seems like maybe I don't have enough gas but turning it down to both valves seemed to work even if only a temporary measure. Unfortunately it seems like alot of commercial cooking equipment do not have a convenient place to check gas pressure without a lot of pain.... Any ideas? Planning to get back there in a day or two to go back over it. Luckily they have another older convection oven they can use if this one is acting flaky.
