In his cookbook he tells most of his secrets w/o having to use his bottled spices. He gave a talk one year at our fiery food festival but as luck would have it the sound system failed. Come to think that was 1996. Time flies. PBS once had a series of maybe 10 shows called The Great Chiefs Of New Orleans. Really good information on cooking. All the restaurants were famous or well known except one outside of town. A dive but still considered in the top ten.

For those that have not had New Mexico cuisine most of it is what I call fork it. It comes on a plate all kind of running together so you stab the plate and eat what ever you fork. I don't like food served this way. Sophia's doesn't. Everything is separate more like in Mexico so the flavors stay distinct. If any of you ever eat here the waitstaff will ask "red or green" Most visitors won't have clue. All they are asking is do you want red or green chilis on your food. There is also "Christmas Tree" That's both.
That show is cool. We have a little foreign foods store and from the outside you would never guess but go in and they make sandwiches that are just mindblowing and the baklava is pretty darn good too, they even have a small 10 table area in the back of the store to take your food and sit down to eat it.

Dives I was watching Diners Drivins and Dives last week and picked up a segment after it had started. I'm watching and thought this has to be New Mexico. NM has it's own type of food. Not as much as Louisiana but still recognizable. The place was called Sophia's Place. Deb went on line to the show and discovered this place is 5 miles away. I went by it forever and yes I thought it was just a dive. Watching the food prep on the show I could see this guy wasn't a cook he was a chef. Sunday we went there for an early lunch. People wall to wall, only 9 tables, and a 30 minute wait but well worth it. It was like eating in an upscale restaurant. Top quality food. Great details. Just shows me not to judge the package. I'll be back.
