Thanks guys, that's what I figured.

Im going to have to take the machine into the car wash to try and remove most of the black.(of course protecting the electrics and evap. just going to utilize the high pressure and plain rinse water).
then bring back to shop and commence the usual cleaning steps.
Have to use the car wash as it's still 5*F outside and boss doesn't want a skating rink out his back door

Book off half a day to start. Remove everything you can (hoses, curtain, water distribution tube, float and clean separately. Run a sanitizing cycle then clean out the dispenser of ice and rinse thoroughly. Make sure the hoses are clear as they block up. There is a restrictor to remove from the hose by the distribution tube. There is often gobs of bacteria around and under the evaporator which you can brush out sort of. You may have to snake the dispenser drain as the guck from above can block the drains. Good luck Mr. Phelps.

Just looking for some tips on properly washing(cleaning) these mold and fungi infested machines. they sit above the Coke dispensers.
it's difficult getting the evap to come away. plastic that use to be white has been black for awhile. it is some gross! felt like driving away with the rear van doors open.
we last cleaned it in april of 2009 (part of our pm service twice per year) and then was told that he(subway owner) has a maintenance guy that will look after all the stuff and call us only if they needed parts or refrigeration walk ins went down. now this is where we are at.
The machine is either a 250 or 450 machine with that microban that does not work in these environments.
    thanks guys
