Variable speed air handler

It looks like every manufacturer sells a variable speed air handler. What is needed to take advantage of variable blower speeds for better humidity removal in AC. I know that Trane has their own control, but does Honeywell or some other company make a generic control that will work with any VS air handler?

A humidistat or a two stage thermostat will do fine provided the unit selected has the ability to adjust for latent loads.
