I'm replacing a 30 year old furnace to increase efficiency
before the rates go through the roof.

I've had 4 bids, each with a different brand. I chose these installers based on reputation and ability, as it's noted repeatedly here that's the most important consideration.

One guy I scratched off because he spent only 5 minutes total in the house, and tried to get my decision that night.

The other 3 seemed to put considerable thought into everything and answered any questions I had.

They've all agreed that the 90 % is the way to go, based on everything.

My quesion is: I can get a 90% single stage or 90% 2 stage.

What would be the difference besides comfort, which I've seen in another post? Would a 2 stage produce a noticeable increase in my electric consumption if it does not have an ECM motor?

The offered 2 stage has a 10/10 warranty while the single has a 5/5.

A 2 stage furnace should be quieter, use less power for the blower, keep the house more “even” temp

A 2 stage is the way to go. When I replaced my 50 year old Lennox with an Infinity 96 I was told it would make a great difference in comfort. I was skeptical but it made a huge difference. And my gas usage is about half what it used to be.
