Cousin is going to butcher her pig. She offered the jaw after i said something about it being the best cut. Ive had it smoked and roasted, but never done it myself. Has anyone else smoked or roasted the jowl? Should I treat it like bacon for smoking?

I don't know anything about DIY bacon but the pork jawl bacon that FoodLion sells is wonderful.
