Well now that we have a bunch of turkey and trimmings left over ...what do you do with them ? I will take the carcass of the bird and make a soup with dumplings and make latkes out of the potatoes and give the rest to the dogs...how about you guy's ?

Since we go to my sister's for Thanksgiving she has all the leftovers.

I do get the carass to make soup with. I make a nice pot of turkey and rice soup this year.

At Christmas I get the leftovers. :D My favorite thing to make is turkey salad sandwiches. Chopped up turkey, celery, onion, a sprinkle of tarragon, dash of worstershire sauce and mayo. all mixed together. On white bread with lettuce.

I have one turkey leg left. I have ate it for every meal since Thanksgiving except for lunch Mon thru Wed.

Leftover turkey, smashed potatoes, stuffing, gravy, green beans, cranberry sauce, etc. I could eat that all year and never get tired of it! I had it for a week and was sad to finish it. Yum!

we have one of those vacuum seal machines (foodsaver, i think?) and we made up turkey dinner plates complete with gravy and sealed'em and stuffed them in the freezer. Good stuff! now i can have thanks giving dinner whenever i feel like it! no rolls, though.. they end up about a 16th of an inch thick.. still taste fine, but it's just not the same..
