have one of these 6 ft prep tables, being used to store pizza dough, that has evap as tubing, no fans..
runnning off pressure control, what is the principle of operation on these units, should they ice up, and then defrost (cut in set to guarantee defrost) or ?

I always set them up with a regular A19 thermostat for temperature control and a timeclock for one nightly defrost period to clear the frost.

temp or pressure controled odds are it will need a defrost clock.

Set pressure control to cut out at 20-25 deg. F and cut in at 38-42 deg.F and you will never need a defrost control on this type of box. I have removed many controls that were not needed when unit is set up properly. OEM on this box had pressure control only. why change now? read p/t chart for the refrigerant you are using and don't forget to verify actual pressure cut in and out w/ guages. Good luck.

Unless it's a 22 machine.
