last week i boiled some italian sausage so I can slicem in half and then grill. Before they hit the grill, they marinaded in a mix of olive oil, sazon, lemon pepper, garlic, honey, italian seasoning and just a lil bbq sauce. In a seperate pan I sauteed red, green and yellow peppers and lots of onions. didnt drowned them, so they were still slightly crunchy. After grilling the sausage, I mixed everything together. OMG what a smash at the party. Now, my wifes aunt want me to make it for her daughters grad. party. Is there anything I can do to makem better??

No fan of boiling meats here.

Grill 'em, THEN cut 'em.


I'll agree with beencool, though, putting that over pasta sounds awfully good.

Almost sounds like dinner tonight....

Here's one I got from the fire science teachers I work with:
Grill the Italians (don't have to cook them through)
Slow cooker with onions, peppers, and pizza / spagetti sauce till done.
Great to make ahead when you don't know when people will be eating (moving, open house parties, too drunk to feel like doing anything ........ ( oh yeah, something starting on fire) Remember I got this recipe from fire fighters!
Too easy & never heard a complaint! (I promised them I wouldn't share this one but I don't think they frequent this site) If any fire fighters out there: Thanks guys!!!!

In Chicago, their secret ingredient on both sausage and beef sandwiches is giardiniera. It's a mix of stuff in olive oil. It's amazing. Only here in NM no one knows about it so I have to buy it on the web. Only sold in a case of 12 bottles but that's ok as it gets used.
I couldn't remember what was the secret until someone on this forum said GIARDIDIERA!!

Great site. That giardidiera comes in hot or mild. NO MEDIUM ??? :) It would be good if you could 6 of each and try it out. It would be a leap of faith to order 12 hot ones. :D

You don't ever want to boil a sausage, it will cook the flavor right out of the meat. Also Boiling a sausage will usually cause the casing of the sausage to split causing you to lose all the liquid in the meat

You can poach a sausage, which means getting your water or beer just where
steam is rising off of the surface, but before the liquid starts to bubble or boil.

We are doing brats tonight and first start by poaching them in a bath of beer onions and butter

Then finish them off on the grill.

Plate em with some potato salad and a couple of bottles of bratwash.

Well I dont boil it. Just get it to where I can slice the links without smashin or shredding the meat out. Usually just getting it hot is fine. As far as the 12 bottles from that site, Ill order all 12 of mild. The hot wont be a leap of faith, it would be a suicide dive. I cant eat ANYTHING hot. Spicey a lil, but hot sauce hot, noway. Mild Maybe, but I only want my coffee hot!!

I am a yankee from Philly. I used to hate hot food until I moved to the South. If I am not sweating while I eat spicy food now it it is no good.

Don't split the sausages until after they are grilled. It will retain the juices (fat) in the meat while cooking.

I have tried every grill imaginable and have found the perfect one for me. It is small but does an excellent job. It is a Lodge solid cast iron camping grill. I was and still am a Char-Broil 940 fan but the little lodge does a better job. If you can get it buy natural charcoal. Do not use charcoal lighter fluid. Don't even mention gas grills to me.

I make my own brats. I need to try making some Italian sausages. It is a once a year thing for me now as I am well on my way to losing 100# of fat I don't need. Can't eat and drink like I used to.

Im on the same exact page. I used to be 280lbs....of burger king grissle!! 3 necks, stomach folded 5 times when I sat on the bowl...you get the picture. Now Im 195lbs, workout everyday and diet like a demon. Boccoli,sweet potato, chicken and liquid egg whites are the bulk of my meals. Never fried anything...Its hard to cook things that you cant eat (italian sausage) cause you just have to try it, and another, and another, and yet another....lol::DD:

I don't find the hot all that hot really. I guess you could use a little less.
I know it's natural to think people living where you do might not like stuff too hot. On the other hand my wife's son-in-law in New Hampshire would put that notion to rest. For him, the hot is where it's at.

As we know from the trade. Hot is a relative term.

Certain things need to be hot. Like chili and seafood cocktail sauce. Hot to me is so you have a little bit of sweat under you eyes when you eat it.

You shouldn't have to have a glass of milk next to ya when you eat a piece of meat loaf. You should be able to taste the pasta through the spaghettie sauce.
Spicy but not ridiculously hot so that is all you taste.
