As there are just two of us in our home, heating up a fryer for a fish fry took a lot of oil and time.
I found the trusty wok used a lot less oil and was very fast. My range has a 14000 btu burner and gets up to temp like now. Controlling temps is better as the oil doesn't cool down much. I go about 20deg over what I want and start cooking.
Peanut or canola seem to fry well. Almost no flavor.
