i am looking for some good recipes to try out on some flank steak
all i have now is the 'good eats' recipe but would like to try more
I am looking for non preservative, non pre mix, not Fred's fabulous powder. Just pure home made, real ingredients, marinades for beef jerky.

I generally don't use a recipe as such.

I put salt, pepper, and some liquid smoke in a bowl along with either soy sauce, teriyaki, hot sauce... Kind of mix it up a little.

I like peppery jerky, so I usually go heavy on the pepper.


As winter comes, I keep thinking about trying a recipe I read once for something called biltong.

Not quite jerky, but it is the african version. I've never tried it, but it sounds interesting.

this i s the one i use..i think it has just a touch of heat
# 2/3 cup Worcestershire sauce
# 2/3 cup soy sauce
# 1 tablespoon honey
# 2 teaspoons freshly ground black pepper
# 2 teaspoons onion powder
# 1 teaspoon liquid smoke
# 1 teaspoon red pepper flakes
soak over night then in the food dehydrator with the heat set to the absolute lowest for 24 hr

Molasses, hot sauce, liquid smoke, and any other tasty ingredients you think off. Just use the pleated filter and box fan like on Good Eats instead of the dehydrator.

pretty much same recipe minus liquid smoke I marinate than smoke over apple wood for a couple hours than to the dehydrator till its done

I use a liquid base of Soy sauce with lemon, then season with my favorite flavors including garlic, onion, pepper, brown sugar, and worstershire. marinate a few hours or more.
My family loves these cooked on hot coals to medium done.
