I am a service tech and i mostly do AC, split systems, RTUs, and such.
But i occasionally end up working on some reach-in style coolers, some i
can easily get technical info, like service manuals, for on the internet.
some others, Like Hobart, are not so friendly to other servicemen.
So then is there anywhere to get technical info for these other
manufactures? even just things like what the suction and head
pressure should be would be good help. sometimes these things
are so greasy you cant even read the factory charge or model number. D8

Or maybe there is a good source for learning about these kind of systems.
any feedback will be greatly appreciated and absorbed.

You will find that alot of the manufacturers are that away. But the owner of the equipment can demand service manuals from them and they must comply. They will probable charge for them.

You can call hobart to gain access to the technical website.

Hobart is a very proprietery company. It seems like they want to keep there service info a secret. Also i have found that there parts must be purchased directly from them. They do not work through distributors as most manufacturers do. They charge everybody full list price (ouch) on parts regardless if your the end user or the servicing company. All the equipment and service guys i talk to agree with this. As far as operating pressures go, you should be able to look at similiar equipment or a textbook to determine appropriate pressures for your application. Manufacturers info would be helpful, but with refrigeration knowledge you probably don't need their info.

Joe you mention the hobart website. Does that give you complete service information, or is it limited to basic user guides, owner's manuals etc.?

There are very few service manuals. There is one for the blast chillers used in big box stores. But for the most part it is parts breakdowns and programming manuals.
