I have a new customer who has a Taylor Model # 162-27 serial # J7127529 soft serve ice cream machine. On the left, they have chocolate and on the right, they have vanilla.

Customers have been complaining of both flavors not tasting "right" and the texture feeling grainy, and leaving a pasty feeling in their mouth. I tried some and found the same thing. They have used the same pre-mix ice cream for two years, from the same vendor. The vendor even took back the old mix and supplied them with new. The customer said this got worse over the course of a year. The Taylor service rep told them if its freezing properly it cant be the machine.

I called the mix manufacturer and they said they recommended a 15 degree product temp. The product is 13.7 on the left side and 15.5 on the right side.

The refrigeration seems fine and all coils are cleaned. They clean and sanitize the machine daily.

I found the front teflon bearings worn on the beater blades, and some marring in the evap cylinders.

Could worn blades and teflon bearings cause this change in flavor and texture?

Yes it could, Taylor recommends 90 day replacement if I remember correctly,it sounds like product is not being beaten properly, there are alot of things that could cause this, I would do a tune-up kit replacement and go from there, you would be suprised at what a big difference a tune-up kit could do.
Most customers dont' do tune-up kits till a tech tells them to,give that a shot and see what happens.

ditto.

Did you pull the entire product from the barrel and get fresh warm product in??? Did you check your pressures.

With soft serve machines, I always take like a 44 oz cup and fill it multiple times with product until I almost have liquid coming into the cup thats the same consistency and temp as the hopper has.......and then let it run and monitor it.

If the blades are worn, and the machine is experiencing extended run times to freeze the product, you will essentially beat the product to death, since the auger motor should be running the entire freeze cycle.

I had one call like this today. Electro-Freeze running too long. I had 225/24 pressures. Had to adjust inlet valve from chiller and AEV til I got it runnin a 255/17. Then all was gravy.

After reading Iraq's post, I would also check the suction pressure, every taylor has a tag on the valve stating what pressure it should be for that model, also make sure the condensor coil is clean, by clean I mean that you can see through it, is dusty here so that happens to me alot. I still stick with the tune-up kit change but check the others too.

overbeating will cause the cream to lose its proper consistency.

This machine doesn't use scraper blades but what will help if you put some new door bearings on it (the big white plastic cups that slide on the door) and if the machine freezes down within about 10 to 12 minutes than the ref is fine also if you use regular mix like trauth in the gallon than your less likely to have a texture taste and the company that makes the powder mix wont tell you this because they don't want to lose a customer

Well, I about sh@* myself when they told me the price of the beater blades. The cracked shaft it part of the dispenser front cover and that was too pricey too.

I bought a rebuild kit and installed it. I fixed the cracked shaft with 45%.

The machine works well now. Like someone said, the mix was just getting beat to death.

"Hey, the unit even shuts down now by itself." was the comment by the counter person.

Thanks again for the replies.
