I am having troubles with the mix in mix cabinet too cold.

How do I adjust the temp in the cabinet.

Anyone know how these things work??

Normally I am a Chiller,Boiler,MUA guy.

I mostly worked on 8634's, but I can try to help... does it have a computerized display? And what type of machine is it (ice cream, shake, both?) And by cabinet to you mean hopper or freezing chamber?

No computerized controls.

It does have a board with viscoity control, mix control, and I can't remember what the other was.

This is a Ice Cream machine.

Cabinet is under the heads and has its own refrig with R-12. This cabinet is were the mixes (Van and Choc) go. There is two hoppers that hold the mixes with piping to the pump.

Hmm... its not looking too good here... not on my end, anyway. (8634's don't keep the flavoring cold- they go in a room temp.) But, if they are being held in a refrigerated cabinet, there must be some type of thermostat controlling the temp. How "too cold" is it? are we talking a few degrees, or frozen? What type of refrigeration is in the cabinet? are they cold-wall hoppers or is there an air-over evap in there? Sorry for all the q's, but I have never worked on this model before.

No Tstat control anywhere but it does have sensors that go to the board.

Yesterday the cabinet was 0 degress today the cabinet is 30 degrees so its getting better but I haven't touched anything to do the the cabinet compressor.

If there is no control for the temp, I would assume that is supposed to be a constant temp, and is not controllable. Perhaps the board is bad? Of course, with you being in the line of work you are in, what are the chances you've got an extra one laying around to try? I think at this point your best bet might be to call Taylor. Unfortunately, the factory doesn't take kindly to helping anyone but their own. Call your local distributor's service department instead. They're not quite so prejudice. :D

Oh yeah, it could be the temp sensor, too. Without the computerized display, its kinda hard to tell what temp the machine "thinks" it's at, though.

Is the evaperator coil iced up?

I can't see the evap but since my suction is iced up I will say yes

If your evap is iced up, then it probably isn't a sensor/board issue, but rather a refrigeration issue. Did you get to figure out what kind of expansion device you have in there? Possible issue with that or maybe low on charge... or airflow issue if it's an air-over coil.

Those machines aren't designed with a defrost so every time you clean the machine which should be at least every three days you need to shut it off while your cleaning it so it would defrost

there is no t-stat there is a thermister in the cab. on the top in front of the evap.it goes up to the left soft tech control and is adjusted by the pot that says mix to adjust it turn the pot all the way clockwise,fill a cup with ice water and turn the pot till the small compressor shuts offif it dont shut off the board or the probe is bad,take the wire from the board that says mix and the black from the ground block and in that cup of ice water you should read 32-36 ohms if not bad probe,if yes prob. bad board just swap the board from left to right sides as you dont need that feature on the right side cause the cab. is controlled by the left side.freezing up problem,i dont know what the serial number is your working on but probally a little older model so no defrost,you will need to do 1 of 2 things 1 what i like is a freeze stat or 2 install a defrost timer like a residential refrigerator has.

Yep.

Does it still have 12 in it or has it been converted to something else? I changed one over this summer and had a problem with a warm mix bin. The mix bin has its own expansion valve and I had to adjsut it to get the proper temp in the bin.
