For me it would be don't.
I know there are people that do this work and I'm glad it's them.
A guy I used to work for said " No mobile homes, bars or restaurants" Why? Slow pay or no pay.
Many work on really small margins and many more don't believe in preventive maintenance. It's always an emergency and some are open 24 hours. It's hard to shut down equipment in a 24/7 situation.
I'm sure some won't agree with me but I think there are hard dollars and easier dollars out there and For me restaurants and bars are hard dollars.
A company I know well just walked away from all the Windys restaurants in town. A bunch. Said they were just too much trouble to deal with.

When they call you at 700pm, full bore dinner time, with a water leak from an airhandler hanging above the ceiling directly over a prep table in the kitchen with 5 people working ................whew.........Your gonna wish you were somewhere else.

C.O.D. is the only way to work for the foodservice biz.
