I was reading a Carrier Infinity furnace brochure about how it's some of their 2 stage furnaces both 80% and 90%+ can uses a 1-stage T-stat but has a 2-stage burner, and it did not go into detail. How does that work?

The staging is based on time this way (not as good as being based on actual home conditions in my opinion).
I think you'll find that the Infinity control ,does not use a timed cycle, for controling two stages.

I think you'll find its based on how long it ran during previous run times.
The control board uses an propriatary algorthym to determine when and if to go to second stage.
I would prefer to use a stat. But Carriers Infinity board is better then many brands time only boards.

So that means it can take a long while for it to recognize that it's taking too long for the heat to reach it's desired temp? Wouldn't it just be better to have the thermostat determine if it needs the extra stage?

Already said I prefer the stat to control second stage.
As for taking too long to reach set point. The idea isn't to meet set point quickly.
The IAQ holds off second stage for as long as possible to get long run times in first stage.
As it gets colder outside, longer run times keeps the house feeling more comfortable.
