Do any of you do any home canning?

I just got into it. I spent this past weekend making dilly beans, garden garbage, cherry applesauce and sour cherry jam. This is my first attempt at canning anything, and I'm loving it so far.

I have never seen dilly beans in a store (can't find them). It has been a few years since I made them...do I ever miss them.

Our specialty is salsa...we just add stuff, no recipe...

My grocery store sells dilly beans but they are about $8 a jar. I made 8 pints of them and I think I'll see how this first small batch goes and then I'll make a big batch. I made one jar with hot peppers in it, because spicy hot dilly beans are the best for stirring a Bloody Mary.

P.S. Who is "we"? It sounds like you're married already! Did you try the dip?

Haven't tried the dip yet (but will), and yes we is married, just funnin.
But I can remember (sort of) New Orleans....a Bloody Mary was served with a hot bean in the glass.

One thing I do is pickle, whole heads of cabbage. When they are done, I use them to make cabbage rolls....

P.S. DuJane: I think u should come to a convention were u can meet my future ex-wife.

I was gonna start a thread on canning and saw this one.

Monday night I got a hair up my rear to make some veggie soup. I started out with a small 4qt soup pot. As I added stuff it got to the top so I transfered it to my bath canning pot "probably 5 gallons" and when done the pot was close to 1/2 full. I decided to can them and read that you need to use a pressure cooker for low acid foods like tators and beans and not the bath canner. So I borrow moms pressure cooker and canned 7 qts plus a small bowl of soup.

I enjoyed it so much to see this marvelous method of preserving food without filling up the freezer I'm gonna go on a canning frenzy.

Two weeks ago I had some friends over for crabs, we ended up eating up my last 6 jars of dillybeans. So last weekend I made another 36 jars, and a few spicy pickles, and garden mix.

Dilly Beans are pickled green beans, and if you make them like me, spicy as hell!
