charcoal vs gas vs a smoker which do you prefer and why?l i lke charcoal but sometime it can be A.P.I.T.:D :D A.

I vote charcoal smoker (not in the poll) as in the chargriller w/firebox. :D

Gas is nice for convenience, but so is McDonald's.
For real food, you need to use real fire.
Hardwood charcoal is the way to go. It's a little trickier to cook on, but if you're cooking outside, it shouldn't be like cooking in the oven. It should gain flavor as compared to inside, where it just barely retains flavor.
Charcoal is the only real way to add grilled flavor to food.

Gas is were its at. Charcoal is a pain all right. It is the smoke from the meat fat that gives it the most flavor.
To give my gas cook meals a smokey flavor I use wood chips soaked in water.
Now, I even have this little cast iron thing that you set right on the buner that holds the wood chips.
The only time I use charcoal is for black pot cooking.

........ you burn down your garage while deep frying a turkey.:D
1/2 each smoking/ grilling. but gave up gas cooking a few years back

I'll third that!! Love cooking using all three. Just depends on the when and where. Like when I'm on a canoe trip, a traditional "wood" fire works really well for cooking!!:p

Personally, I prefer to slow cook/smoke meats, however sometimes that is not always convenient. Especially when entertaining, then I use a combo of wood & charcoal slow cooking/smoking @ first then allowing the damp wood to dry out bringing up temp cooking the meat quicker. I have had good results.

Propane, I used char for years, I wont go back. Propane for everything, bbq, steaming crabs, deep frying turkeys,ect ect...

There is a strong train of thought that the propane curing of tobacco raises the carcinogenic properties of it. I still use it buy prefer charcoal .
