I use italian dressing aloy because it is quick and easy but some times I try new things, try this one some time my wife and I liked it.
Pacific Rim Marinade
1 small yellow onion chopped
1/3 cup soy sauce
1/4 cup lemon juice
1/4 cup veg. oil
2 tablespoons dark brown sugar
2 tablespoons minced garlic
Wisk together until sugar is dissolved

Directions:
Here is a nice marinade for grilled chicken breast or chicken wings. The
combination of citrus goes well with the herbs. Marinate chicken breasts
3-4 hours in this mixture or wings 4-6 hours. It also works well for
cooking in the skillet too. (If you can't get fresh parsley, use 1
tablespoon dried.)
Combine the juices, mustard and worcestershire in a nonreactive bowl. Whisk
in the oil a little at a time. Add the garlic, parsley, oregano, salt and
pepper.
Ingredients:
1/2 c Orange juice
1/4 c Fresh lemon juice
1 ts Dijon style mustard
1 ts Worcestershire
1/4 c Canola oil
2 Minced cloves of garlic (up to 3)
1/4 c Chopped fresh parsley
1 ts Dried oregano
Salt and fresh ground pepper to taste

Yeah, look in the aisle in the supermarket where they keep the mexican food (not the crummy taco in a box stuff, the real stuff the MEXICANS eat) and you'll find some stuff in a bottle called Mojo. I think it's made by a co. called Goya. I like the kind with lemon juice in it.
Shake it up and dump the bottle into a bag with the chicken overnight.
Grill up the chicken and add some spicy BBQ sauce.
Man that's good!

Take the skin off the chicken, buy tandoori spice PASTE at an Indian food store and follow its directions. It's not spicy hot but lots of flavor. It's roasted at a high temp and delidious.

Here is another chicken marinate:
white wine
lemon
tarragon
black pepper
garlic
olive oil
This is also great for cooking escargot....

As a matter of fact, I just put some in the fridge for tomorrow when I get home from the beach.:)

Marinate skinless breast pounded thin in a zip-lock with lemon juce & olive oil, cumin & fennel seed & oregano. Salt & pepper to taste & brown up in a saute pan. Deglaze pan with white wine & lemon juice, return chicken to pan to finish cooking - remove when done, throw crumbled feta cheese into the sauce in the pan to go gooey & happy - spoon sauce over the chicken to serve. Yum.

Put me down for orange juice and tarragon. That's all I do.
Tarragon is a very strong herb so if you use other stuff with it it doesn't make any difference. The tarragon over powers it.

Here is a recipe from a BBQ stand in AL.
1 stick of butter
1cup of apple cider vinegar
thyme, salt, pepper
Heat the butter until it melts and add the vinegar then add thyme until the mixture looks dark.
Add a little salt and pepper and bring to a boil and turn it off.
You can marinate the chicken for 30min-1 hour but not too long because it will start to "cook".
It works great if you brush it over the chicken as you grill.
I might add a small dash of cumin to my next batch.
This sauce makes a great base on your chicken if you want to add other BBQ type sauces as well it give an extra dimention.

2 cups jamaican ginger beer
1 cup soy sauce
1 tbsp white pepper
3 tbsp sesame oil
2 cloves garlic, finely minced or pressed
1 tsp crushed cayenne pepper
1 lime (juice and zest)

1 tablespoon each of dry oregano, fennel, thyme, basil, and rosemary. Put it all in a mini food processor and grind to a powder. add a little salt and fresh ground pepper and use as a dry rub for the chicken. barbecue or bake

1 part chipotle peppers in adobo sauce
1 part dale's sauce (made of soy sauce, onion powder, garlic powder)

i use
3 tbsp soy sauce
1 tsp sesame oil
2 tbsp honey
2 tbsp mirin chinese cooking wine
1/4 cup canola oil
squeze of lime
1 tbsp garlic powder
1 tbsp onion powder
fresh pepper
kosher salt for taste not to much salt the soy sauce has a lot.
combine all ingridients into a large zip loc and combine well
place the chicken breast up to an 1ib-1/2 and marinate for 3 hours
after take out the chicken and pat it dry with paper towel
put it on a hot grill only turing once.
this chicken is very moist and tasty

Orange marnalade is great on chicken breast, apply about the last 5 min. of cooking.
Italian dressing is the best/ I have used a ceasar that was pretty good to, sometimes I throw a little lemon juice, worchestshire sauce,in with it.
