My HVAC contactor did a load calculation on our new home and said it was just over needing a 3 ton gas pack unit and recommended us getting a 3 1/2 ton unit. Would a the 3 ton unit be sufficient if it was that close or should we get the 3 1/2 ton unit? What are the trade offs. Someone told me the 3ton unit would do a better job of keeping the humidity down. Thoughts?

If the system is a little under your need it will run more and dehumidify more but on the warmest days of the year you may not feel as cool as you my want. If the system is over sized it will have shorter run times and may not dehumidify as well.
You said his calculation showed a need greater then 3 tons, but not all the way to 3 1/2 ton. So he is making a judgment call. He may also be looking at the unit he plans to install. Most units are given the Name 3 ton or 3 1/2 ton but the actual BTU rating may be more or less then exactly the nominal tonnage. If he is a good contractor that knows your area and has your trust then you may want to use his best judgment.
Good luck
