I use a fieldpiece srh2 with a 80-pk8 fluke ktype clamp and a air temp probe also ktype to plug into the srh2.

Quickest would probably be an IR thermometer.

Most accurate. Well, NOT an IR thermometer.

There is a trade-off between speed and accuracy.

The setup that Mason described would be a good place to start. K-type thermocouples have some issues, but are generally accurate enough for field work.
