Properly Charge?

How would you know if the system is properly charge without putting a pressure gauge in the system.

I got a small freezer(8 cu ft). No evap fans and icing-up.
Temp sensor is at 12 degree F. Temp sensor probe is frozen so I cannot pull it out to insert my fluke meter to prove if my sensor is bad.

Evacuate look on name plate and weigh in the proper charge.

I do know that part. Except I just want to know if there is a way to find out if it is undercharge. I don't usually put my gauge especially on such unit with a critical charge. Under one pound.
